Level One is the foundation of The International Agave School’s certification program, a comprehensive and structured course designed for professionals and serious enthusiasts seeking a deep understanding of agave spirits.
This course covers the full production cycle from plant to bottle, including agave cultivation, anatomy, cooking, fermentation, distillation, maturation, and bottling. You'll explore geographical indications, classification systems, and the vital role of regulatory bodies, such as the NOM and Consejos Reguladores.
In addition to technical knowledge, students will gain historical context, tracing the pre-Hispanic cultural significance of agave and the origins of distillation in Mexico.
The course concludes with an introduction to sensory analysis and tasting methodology, helping students build a systematic approach to evaluating Tequila, Mezcal, Raicilla, Bacanora, and Sotol.
Upon completion, participants will have a solid grasp of the agave spirits landscape and the tools to continue their journey toward the next level.
