Our History

The story of the International Agave School begins with Santiago Jimenez Castro, a sommelier from Mexico City, who moved to Denver, CO, to work in wine and spirits distribution. It was in this city that he met Ed Martin, a respected sommelier and wine educator, and Barney Treadway, an adult beverage educator and the president of the Wine Education Institute. Their meeting began with a simple question from Santiago: “I tried a weird, unique wine, wanna see it?” Ed's curiosity sparked a conversation that led to a lasting friendship.

Ed, who had a deep passion for wine education, soon introduced Santiago to Barney, knowing that Santiago was eager to educate others about agave spirits and their cultural and global significance. Ed and Barney, both seasoned educators with years of experience in the world of wine and spirits, recognized Santiago’s vision and shared his dedication to advancing the future of agave spirits.

Together, the three of us Santiago, Ed, and Barney combine decades of knowledge, experience, and an unwavering passion for teaching. We believe in the potential of agave spirits to be recognized and celebrated worldwide, and through our collaboration, we are dedicated to shaping the future of agave education and the industry as a whole.

  • Metl Tlen Yolia

A Nahuatl phrase meaning “the agave has a soul” or “the agave lives.” This honors the indigenous roots of Mexico and reflects our deep respect for the ancestral knowledge and traditions of Mexico's indigenous communities.

 

  • The Bat

Bats play a crucial role in agave sustainability, as they are one of the primary natural pollinators of the plant. Including the bat symbolizes our commitment to environmental responsibility and the vital balance between nature and agave.

 

  • The Agave Plant

At the heart of our logo is the agave plant itself, the source of all agave spirits and the central focus of our school. It symbolizes tradition, transformation, and the craft we are devoted to preserving and sharing.

Inspired by the Mexican national anthem, where the laurel symbolizes victory, it represents the achievement and pride of every student who completes their education at IAS.
