This course examines the historical evolution of agave spirits from the 18th century to the present day, alongside a detailed study of agave biology, including taxonomy, metabolism, reproduction, and plant health challenges. Sustainability is emphasized, focusing on the ecological roles of agave, comparisons between wild and cultivated plants, and the essential relationship with bat populations.
Geographical influences are analyzed in depth, covering the impact of altitude, soil types, and specific Denominations of Origin on agave characteristics and spirit profiles. Cultural components explore storytelling, traditions, mysticism, Mexican gastronomy, and the recognition of agave spirits as vital cultural heritage.
The course also introduces advanced service techniques such as proper glassware, presentation with salt and citrus, food pairing strategies, and the role of cocktails in expressing agave’s versatility.
